Chocolate & Raspberry Antioxidant Crepes

I don't like to give away my secrets…..but I have decided I will share my secret "dessert" crepe recipe with you since it is just way too good to keep to myself. I love making crepes for my friends and experimenting with different ingredients. After years of playing around with ratios and ingredients, I have developed my own style of crepes that are absolutely delicious. So without further ado……

You Will Need:

  • 1 large egg

  • 1/2 cup of whole wheat flour

  • 1/4 cup of water

  • 1 tsp of coconut oil

  • 1/2 cup of almond milk

  • dash of salt

  • 1 tsp of honey

  • 2 tsps of pure vanilla extract

Extras (optional):

  • Fage 100% non-fat greek yogurt

  • raw cacao powder

  • raspberries

  • bananas

Mix all of the ingredients in a bowl to make the crepe batter and cook in coconut oil on a frying pan. If you want to make chocolate crepes, you can add raw cacao powder to the mix until you reach the darkness you prefer. Add in cacao powder to your greek yogurt , as well, and mix in a bit of honey for a delicious chocolate-y filling packed with protein and antioxidants.

In a separate small saucer, throw in some organic raspberries with a tiny bit of water to create a raspberry "sauce" and drizzle it on top of the crepes. Slice up some bananas to stuff inside and voila!
