I could eat this meal for the rest of my life and feel completely fulfilled...
If you ever find yourself in the LES (lower east side) of Manhattan, please do yourself a favor and stop into Tiengarden on Allen Street. This is one of my absolute favorite tiny vegan spots in NYC to eat well and rather inexpensively considering the use of high-quality local and organic ingredients.
Pictured above is my favorite dish to get at Tiengarden, but also one of my favorite dishes in the history of dishes. It is called the "iDish" for $11 - brown rice/buckwheat noodles with tofu, carrots, mushrooms, broccoli with peanut curry sauce. This is a good-sized portion, so you will definitely leave feeling happy and satisfied.
Since I no longer live in walking distance of this spectacular restaurant, I have found ways to make my own iDish inspired dishes. On the reg, I eat a lot of broccoli, zucchini, mushrooms, green beans and kale. I like to sauté my veggies and pair it with a hearty grain whether it is with buckwheat noodles or stuffed into a whole wheat wrap. Now, if I could just find the perfect peanut sauce recipe, then we are golden - any suggestions???!
