Cauliflower.... you are better than I thought.

This is such a revolutionary discovery for me. I love potatoes...I mean, so much that my babysitter back in the day told me I was going to turn into one. There is just something so comforting about a warm, buttery baked potato, even if it isn't the healthiest of foods...

My roommate (and close friend) Alicia is actually the one who introduced me to it. Yes, I have heard about cauliflower "mashed potatoes" for a while now, but I never tried it. I was definitely intrigued by the concept, but I didn't believe I would actually be satisfied with the substitution...

....Well I tried it and HOLY COW, it looks AND tastes like mashed potatoes...since then, I have graduated to a delicious cauliflower soup (also inspired by Alicia). It is perfect for winter and great to make in large batches for the week.

CAULIFLOWER SOUP

Ingredients:

  • 1/2 head of organic cauliflower

  • 1/2 cup of minced organic red onion

  • Pink Himalayan Sea Salt

  • Black Pepper

  • Organic Butter

  • Basil leaves (dried or fresh) *optional

  • Organic Broccoli *optional

How to Make It:

  1. In a medium pot, fill and boil with water and a pinch of Pink Himalayan Sea Salt.

  2. Chop 1/2 a head of organic cauliflower

  3. Boil the cauliflower until soft

  4. Drain the water, but leave 1/2 cup or so...

  5. Blend (NutriBullet works great!) with the 1/2 cup (or more depending on how you like the consistency) of leftover cauliflower water

  6. Pour the blended cauliflower back in the pot and stir with a slice of organic butter and raw red onions

  7. Add pepper and a little more salt to taste

  8. Add in some fresh or dried basil

  9. Other fine additions: chopped and boiled organic broccoli.....and if you would like, add a little bit of cheese (can be vegan too!).

Voila....delicious, healthy, and keeps you warm in this winter!
