Organic Peanut Butter Energy Balls
Happy Monday, Loves! I hope everyone had a smashing Valentine's, Galentine's, whatever weekend. I just hope it was fantastic no matter what. It was quite frigid in NYC, but we made the most of it. In fact, the S.O. and I spent the weekend holed up making arts and crafts for our new apartment, and we made chocolate covered strawberries, and the below peanut butter energy balls!
It turned out so yummy we decided to document the process... and you bet these little bitties followed us to the movies to see Deadpool (hilarious dark comedy - go see it if you're into that).
This is not a new recipe by any means, but it doesn't make it any less tasty! If you need a healthy midday snack, try my take on it. It's super quick and easy.
Organic Peanut Butter Energy Balls
Organic Rolled Oats
Organic Toasted Coconut
Organic Chia Seeds
Vital Proteins Collagen Peptides or Organic Hemp Pro Fiber Protein Powder
Pure Maple Syrup
Organic Raw Peanut Butter (or another nutty butter you prefer - maybe cashew butter!? Mmmm.)
Organic Dark Chocolate Chips
Organic Raw Cacao Powder (optional)
Organic Cinnamon (optional)
The ratio is all up to you. You typically need more peanut butter than you'd think. If you feel like it's still pretty dry, try adding a splash of almond milk. Use a spoon (or your hands) to roll it up into a ball, and then stick it on a baking sheet in the fridge for 15-20 minutes.
