a simple, healthy recipe for dinner tonight (in 20 minutes)
Cilantro Brown Rice with Assorted Veggies and Carrot Ginger Soup
INGREDIENTS:
organic brown basmati rice
fresh organic cilantro
organic limes
organic raw cashews
organic broccoli
organic red, yellow, and orange peppers
organic green beans
red onions - (honestly, not sure if the onion was organic, but not totally necessary to buy organic anyways…)
Pacific Organic Cashew Carrot Ginger Soup
I love coming up with my own recipes. I am not exact with my ingredients, so I recommend adding in as much cilantro and lime juice as you feel tastes the best! All I did was boil the rice in a pot of water. While I was waiting for the rice to be ready, I sautéd the veggies with a drop of extra virgin olive oil in a separate pan. Once the rice was cooked, I mixed in the freshly chopped cilantro and added fresh lime juice and threw in a handful of cashews. That's it! It took under 20 minutes for everything to be ready. I scooped a serving of rice into my fancy bowl/plate and layered the veggies on top.
*The carrot ginger soup is optional, but I poured 1/4 a cup of the heated soup onto my veggies and rice to create more of Thai fusion.
It was delicious!
